Jack's third official (we didn't celebrate the first year), and Callie's second. We're not in lockdown anymore so we didn't do a full week of activities, but we definitely celebrated with treats!
Shark Bite White Truffles
Adapted from the Destiny Cookbook White Chocolate Travelers
Ingredients:
16 oz white chocolate
1/4 cup coconut cream
2 TBSP unsalted butter
1 tsp vanilla extract
8 oz white melting candy wafers
Optional:
Maraschino cherries
2 TBSP orange zest
1 tsp sea salt
1 tsp coconut extract
(I had fun playing with the options. The orange zest helps cut the sweetness and tastes like a creamsicle! I also liked the coconut extract with sea salt and no zest, really tasted Caribbean inspired for shark week!
Directions: Combine white chocolate and coconut cream in small saucepan over low heat until completely melted. Add butter, mix until smooth. Mix in vanilla extract, orange zest, and salt. Let cool. Cover and place in fridge.
Remove from fridge, spoon out 1TBSP size balls and roll.
Once you do that, add cherries to center of the balls and roll to incorporate into middle.
Melt candy melts according to package directions. Place skewer in and dip ball in melted candy. Place on parchment paper and allow to harden.
So fun to make! We plated with fishy sprinkles and served with some blue hawaiian punch. A yummy treat for our nightly shark week episode!
